I made Pasta & Meatballs the other day, from scratch! No recipe, no guidelines - just me, my kitchen and gut instinct.
That makes it sound more Bear Grylls than it actually was, but I was excited to try something by myself to see how it turned out!
I made my own meatballs and my own pasta sauce - assuring myself that you can't mess this up - surely? I was right - it was delicious and Ceri was super impressed!

Ingredients for the meatballs:
Mince (I don't know how much I used, just whatever was left in the freezer!)
Parsley (a lot)
Basil (a lot)
Egg to seal
I could've made this a lot easier on myself and simply sprinkled the the Parsley & Basil over the mince before rolling, but I didn't. I rolled the mince into balls, then rolled them in egg, then covered them in the herb mix, before popping them in the frying pan.
I covered them with Fry-Light (a low calorie cooking spray) and they only needed about 10 minutes in the pan to cook thoroughly.
Whilst all this is going on, I made my pasta sauce!
Ingredients for Pasta Sauce:
1 can of chopped tomato
1 Onion (chopped)
2 Cloves of Garlic (chopped/crushed - fly by the seat of your knickers on that one!)
1 teaspoon of Oregano
1 teaspoon of Basil
1 teaspoon Parsley
Salt & Pepper to season
Chuck it all in a pan and watch it cook. Throw it over the pasta and then the meatballs are done, you're ready to serve!

Yum, I love meatballs and pasta. They're so easy to make, I don't understand why anyone would buy shop bought ones where you have no idea what's in them!
ReplyDeleteI know! I used to be so lazy about cooking but now I prefer something i've made to something from the shop or out of a packet - at least I know 100% what's in it!
